Chocolate Guinness Cake

For the festive month, we return to an undeniable favourite here at Nicholsons: The Chocolate and Guinness cake! This amazing recipe first popped up as a celebration of St Patrick’s Day and we couldn’t think of a better option for our Christmas Cake of the Month. So here it is…


For the Cake:

  • 480ml Guinness
  • 480g butter
  • 120g cocoa
  • 800g caster sugar
  • 260g sour cream
  • 4x eggs
  • 8x tsps vanilla extract
  • 520g plain flour
  • 4x tsps bicarbonate soda


  • 500g mascarpone
  • 90ml cream liqueur
  • 90g icing sugar sieved



  • Gently melt the butter and Guinness in a pan
  • Stir in the cocoa and caster sugar
  • Whisk the sour cream, eggs and vanilla together
  • Pour the mixture into the Guinness mix and stir to combine
  • Finally, add the flour and bicarbonate
  • Divide the mixture between 2x 22cm lined cake tins
  • Bake at 160c for approximately 45/ 50 mins until they are springy to the touch and a skewer inserted into the middle comes out clean
  • Leave to cool


  • Gently beat the mascarpone, liquor and icing sugar together
  • Spread over the top of the cooled cake
